About Our Bakery

We are Michael and Dermot Walsh. Brothers and Directors of M & D Bakery. We also happen to be the third generation of bakers in the Walsh family. Twenty seven years ago, we started our very own bakery in the heart of Waterford City, making breads and cakes for the catering and retail industry. Naturally, the Waterford Blaa is the center of our repertoire here. Locals enjoy their Blaa with bacon in the middle, as a traditional mid morning snack. We’re told there are no Bacon Blaas left in city or county after midday.

M&D Bakery goods are available throughout the Waterford area, including the larger retail stores and many smaller independent grocery shops and deli’s. Our most famous offering, the Waterford Blaa, is an indigenous food in these parts, so revered as one of Ireland’s most traditional baked items, that it recently won a prestigious Eurotoque “Taste” award for uniqueness and quality. We are rightfully proud of our own unique version, and whilst the Blaa may be a Waterford speciality at the moment, we intend to make our famous bread roll a star on a national scale. The whole of Ireland will be having a Blaa with bacon in the middle before long !
